Challenging Month

March brought more blogging challenges than I’ve had in a while. As with many aspects of life, there are seasons of smooth, easy success. And then there are seasons where it seems like absolutely nothing is working. Last month, I had fail after fail after fail. I always have a running list of recipe ideas. I assign a few ideas to each month in my calendar to keep me going on new recipes and posts. With a goal of accomplishing a few new recipes each month, that list is essential. So during the month of March, I hit that list like I normally would. But this time, nothing was working out. I tested recipe after recipe and in the end, I only succeeded in getting one new post up on this site (here’s looking at you, Green Pea Hummus). Where does a food blogger go from here? You keep trying. Plain and simple, you keep going. And my next move was turning lemons into… cookies. To be honest, even this recipe for Lemon Crinkle Cookies took more trial and error than I prefer. But, I have to say, all of that effort has paid off and I am incredibly happy with these cookies!

Sweet Success

These Lemon Crinkle Cookies are a great balance of sweet, bright lemon flavor without being tart – the perfect lemon cookie. While creating this recipe, the first batch actually went straight into the garbage. Yes, it was that bad! But the potential was there. I love lemon desserts and I don’t give up easily. So, I tweaked and adjusted and then… success! I could eat an entire batch of these. I won’t, but I could. What do you do with extra cookies? I am a fan of freezing cookies but we don’t have room in our freezer right now. Instead, I brought these cookies to work and I’m so glad I did. I love sharing treats but I also appreciate getting honest feedback on new recipes. The praises were high on this one. I mean “these are my new favorite cookies” is not something I take lightly. Lemon Crinkle Cookies

These lemon crinkle cookies are a great balance of sweet, bright lemon flavor without being tart – the perfect lemon cookie.

Ingredients
  

  • 2½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1½ cups sugar
  • 3 large eggs
  • 1 Tablespoon lemon zest
  • 2 Tablespoons fresh squeezed lemon juice
  • yellow food coloring
  • 1 cup powdered sugar for rolling

Instructions
 

  • In a medium mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together butter and sugar.
  • Mix eggs, zest, and lemon juice into butter and sugar.
  • Gradually stir dry ingredients in.
  • Stir food coloring in a drop or two at a time, until you reach the desired brightness of yellow.
  • Chill dough for a minimum of 1 hour. Can be chilled overnight.
  • When ready to bake cookies, preheat oven to 350℉ and line baking sheet with parchment paper.
  • Roll dough into tablespoon sized balls then roll in powdered sugar until fully covered. Place on prepared baking sheet, 3 inches apart. Bake 10 minutes.
  • Cool cookies on baking sheet for 5 minutes before transferring to a cooling rack to cool completely.

LEMON DELIGHT

When I look back on memories of visiting my grandparents, one thing that stands out to me is simplicity. I recall finding joy in very simple activities such as exploring the vegetable garden, playing dominos, or stomping on the bubble wrap Grandpa had saved for us. While some states are a bit more open, Texas is still a hotbed for this COVID19 so my family and I are still staying home as much as possible. We are relearning to embrace simple activities with our little girl. We love splashing in puddles after the occasional rain we get. We planted our own vegetable garden. We play with building blocks and read books. Yes, we still watch TV on the weekends but we are really making memories through these simple activities.

Our kitchen has also become a place of simplicity and family time lately. This recipe came from my grandmother’s recipe box and is perfect for letting the kids help. Three ingredients and, as suggested by the name, this treat is absolutely delightful. Pull out your blender, pour all the ingredients in, mix it up and enjoy! I made this recipe with pink lemonade but the original version used regular lemonade. Take your pick, change it up based on you mood. Either way, this is a fast and fun recipe to indulge in this summer.

Lemon Delight

Sweet and slightly tart, this frozen treat is perfect for summer.

Ingredients
  

  • 1 pint vanilla ice cream
  • 1.5 cups milk
  • 12 oz frozen lemonade (regular or pink)

Instructions
 

  • Place all ingredients in a blender and blend until smooth. Enjoy!

LEMON HUMMUS with ROSEMARY PITA CHIPS

I’m an introvert… most of the time. We all have our moments of being outgoing, right? I have no problem taking charge during appointments at work. I can lead a camp song like I was born to do it. Even public speaking doesn’t bother me much. Growing up though, I was a painfully shy child. I can remember hiding behind my parents’ legs or behind furniture just to avoid interacting with people. Even now, my natural instinct is to cuddle up at home and watch a movie or spend time with my family. But life really is about balance. I have extrovert friends who I know I can call at the last minute when I really want to get out and do something. I don’t think those friends even realize how much they help me to break out of my routine and reach for my goals.

A few months ago, I heard about a new group here in San Antonio called Florecer Femme.  This is really a community of women who support and encourage one another to flourish and become strong female leads of their own lives.  When I saw they were having a launch event last November, I immediately knew that I wanted to go. I connected with one of my extrovert friends and we purchased our tickets to attend the event. Then it happened, my friend ended up not being available to go with me. The introvert in me panicked a little bit and made up excuses for not going alone. I ultimately channeled the outgoing side of my personality and boldly walked through the doors of that event all on my own. I’m not saying networking in a room full of people who brought their own friends was easy but it was definitely doable and it formed some relationships. Here I am, six months later, creating light refreshments for the latest Florecer Femme event.  I hope that my own experience can give you courage to walk confidently into whatever might be intimidating you and take charge of your own path. Make those connects, start that project, ask for that promotion. However you are looking to grow, I believe you are capable!

Tips:

  • If you don’t have a food processor, you can blend the hummus in a blender just don’t go overboard or you’ll liquefy it.
  • For the pita chips, you can use dried or fresh rosemary. If using dried, you’ll want to add a little extra to make sure you get the full flavor of the herb.

Lemon Hummus

Ingredients
  

  • 15 oz can chickpeas, drained & rinsed
  • 2 Tablespoons tahini
  • 1/3 cup olive oil
  • 1/4 teaspoon salt
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • zest & juice of 2 small lemons

Instructions
 

  • In a food processor, blend all ingredients until smooth.

Rosemary Pita Chips

Ingredients
  

  • 2 whole wheat pita breads
  • 3 Tablespoons olive oil
  • 1 teaspoon fresh rosemary
  • 1 teaspoon flaked salt
  • 1 teaspoon paprika

Instructions
 

  • Preheat oven to 375°F.  
  • Cut pita bread in half so that you have single layer rounds then cut each round into 6 wedges.
  • Place wedges on a sheet pan and brush each wedge lightly with olive oil.
  • Sprinkle rosemary, paprika and salt over wedges. 
  • Bake 6-7 minutes or until golden brown and lightly crisp.
  • Let cool before serving.

Lemon Iced Ginger Cookies

I’m Hooked

I used to think sugar cookies were the ultimate iced Christmas cookie. They are certainly a classic but let’s be honest, they are really just sugar on sugar no matter how beautiful they are. Why not add some flavor to the sweetness? Enter these yummy Lemon Iced Ginger Cookies. Over the last few years I have developed a love for ginger bread. That spice blended with a bit of sweet icing is absolutely delicious. Add in a hint of lemon and I’m hooked; you’re going to have to hold me back from eating the entire batch of cookies!

No Chill Required

Let’s get into the details on these Lemon Iced Ginger Cookies. The first thing I always want to know about a cookie recipe is if I need to chill the dough. Good news, no chill required for these! Preheat your oven and then combine all of your dry ingredients in a bowl. In your stand mixer, beat the sugars, molasses, and eggs. Then gradually add the dry ingredients into the sugar mixture. Keep in mind this dough gets relatively thick which is why I choose to use my stand mixer. Once combined, roll dough into balls and place on prepared cookie sheet 2″ apart. Bake 14-16 minutes then cool completely on a wire rack. Using a fork or whisk, combine icing ingredients until there are no more lumps. Top each cookie with desired amount of icing. Enjoy!

Tips:

  • If you prefer a thin glaze instead of icing, add extra milk to the icing until it is the consistency you desire.
  • If you need to approach this recipe in steps, tackle the cookies one day and ice them the next day.

Lemon Iced Ginger Cookies

Ingredients
  

For the Ginger Cookies

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup brown sugar, packed
  • 1 cup sugar
  • 4 Tablespoons unsalted butter, softened
  • 3 large eggs
  • 3/4 cup molasses

For the Lemon Icing

  • zest of 1 lemon
  • 1 1/2 cups powdered sugar
  • 3 Tablespoons milk

Instructions
 

  • Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  • In a medium bowl, combine flour, ginger, cloves, salt and baking soda.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat brown sugar with granulated sugar and butter. Add eggs and molasses. Mix in dry ingredients 1 cup at a time.
  • Roll cookie dough into tablespoon sized balls and place on the parchment paper. Leave 2-inches between the cookies. Bake for 14 to 16 minutes. Remove the cookie sheet from the oven and transfer the cookies from the parchment to cooling racks.
  • Once cookies are cooled completely, add icing ingredients to a small bowl and whisk until powdered sugar fully mixed into milk (there should not be any lumps). Spread icing over cookies as desired.

Notes

If you prefer thicker icing, consider doubling the icing recipe.
