Summer Treats

We are in full on summer mode which means heat and humidity. Hello, Texas! Summer also means looking for ways to stay cool. We’ve been spending a lot of time at a neighborhood pool this year. Swim lessons and meeting new friends have been exhilarating after so much isolation amid the pandemic. However, pool time is challenging for us to squeeze in on the weekdays. With full time work and school plus an early bedtime for our girl, we need other ways to cool off Monday – Friday. Our alternative for keeping cool? Eating popsicles, of course! To be more specific, we are diving face first into these new Dark Chocolate Tahini Fudgesicles.

Just A Twist

Don’t get me wrong, I love a classic fudgesicle. It’s nostalgic and delicious. But, I also love putting my own twist on recipes. It keeps things interesting when I’m creating new posts for you all. It also gives you something you can’t find in a store. You can easily buy a classic fudgesicle at any grocery store. But dark chocolate tahini fudgesicles are only going to happen in your own kitchen. Grab your popsicle molds, friends. This recipe has fewer than ten ingredients and you can mix them together in ten minutes or less. The hardest part will be waiting for them to freeze. The nutty flavor of tahini combined with the richness of dark chocolate gives you the twist you didn’t even know you were looking for.

Dark Chocolate Tahini Fudgesicles

Servings 6 Fudgesicles

Ingredients
  

  • ½ cup dark chocolate chips
  • ¾ cup tahini
  • ⅓ cup sugar
  • 1 tablespoon corn starch
  • 1 tablespoon cocoa powder
  • 1 ¼ cups milk (I used almond milk)
  • ¼ teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions
 

  • In a medium pot, over low heat, stir together chocolate chips and tahini until melted and smooth. Be sure to scrape sides and bottom of pan as needed.
  • Stir in sugar, corn starch, and cocoa powder until combined.
  • Stir in milk, salt, and vanilla. Continue stirring until mixture just begins to simmer.
  • Remove mixture from heat and carefully pour into popsicle molds. **If you are using plastic popsicle molds, let mixture cool before pouring.
  • Freeze for a minimum of 4 hours or until frozen (I typically freeze overnight).

I have so many wonderful memories that include ice cream! Clearly a sign of a happy childhood. A sign of a happy adulthood, while we’re at it! Blizzard dates with high school friends and clown cones for my 7th birthday party were awesome but the best memories are with my grandfather. He would pull out the big crank churn and help us make homemade ice cream. It felt like it took hours of churning and adding more salt and more ice. But the reward was always worth the wait. Fresh from the churn, it was like soft serve ice cream. I always added chocolate syrup on top and Grandpa would help me scrape every last bit from my bowl.

Those memories with Grandpa are incredibly sweet. However, as a career woman, a wife and a mom, I don’t have the patience to wait on ice cream to churn. When I saw the no-churn ice cream trend I knew I had to try it. The basic concept is combining whipped cream with sweetened condensed milk. Beyond this, the flavor combinations are limited only by your own imagination. The coffee flavor I’ve created here seems to me like a great excuse to have ice cream for breakfast.

Tips:

  • If you’re caffeine sensitive, feel free to use decaf instant coffee rather than regular.
  • Be sure whip the heavy cream yourself rather than using premade whipped cream. There is a difference in texture and sweetness.

No Churn Chocolate Chunk Coffee Ice Cream

Coffee flavored ice cream with dark chocolate chunks – no ice cream churn required.

Ingredients
  

  • 1 single serving packet instant coffee granules (I used Starbucks Via)
  • 1 Tablespoon hot water
  • 16 oz heavy cream
  • 1/2 teaspoon vanilla extract
  • 14 oz sweetened condensed milk
  • 1/2 cup dark chocolate, roughly chopped

Instructions
 

  • In a small bowl, stir coffee and hot water until coffee dissolves. Set aside.
  • In a large, cold bowl, beat heavy cream until soft peaks form.
  • Stir vanilla and sweetened condensed milk into coffee until well combined. Beat coffee mixture into whipped cream then stir in chocolate.
  • Pour ice cream into a 9×5 loaf pan. Cover with plastic wrap and freeze for a minimum of 6 hours, preferably overnight.

Boozy Truffles

Let’s talk Valentine’s Day. Whether you love it or hate it, this holiday is great for making and eating sweet treats! It shouldn’t come as a surprise to anyone but food is definitely my favorite way to celebrate a holiday. My typical go-to is cake or cookies but I wanted to change it up this year. One of the things I love about these truffles is that you can customize them just by changing up the flavor of liqueur. I know we just finished up Christmas and all of its peppermint glory but who says we can’t use that flavor all year round? I absolutely love peppermint with dark chocolate so I went for it! I also wanted to do something more unique for a white chocolate flavor which brought me to horchata. You could make these truffles as a gift for your valentine but you could also just treat yourself – you deserve it!

Tips:

  • If you aren’t much of a drinker, don’t invest in a full-size bottle of liqueur. Just skim the section of single serving bottles (you know, like the tiny bottles they have on airplanes or in hotel minibars).
  • The white chocolate filling is a bit sticky and challenging to work with. Do yourself a favor and leave them in the freezer right up until you are ready to dip them in the dark chocolate coating. Boozy Truffles

Dark Chocolate Filling:

¾ cup dark chocolate chips

1/3 cup heavy cream

2 Tablespoons liqueur – I used a peppermint coffee flavor

 

White Chocolate Filling:

1 cup white chocolate chips

1/3 cup heavy cream

2 Tablespoons liqueur – I used an horchata flavor

 

Dark Chocolate Coating:

1 ½ cups dark chocolate chips

1 ½ teaspoons vegetable oil

Decorative garnish – I used crushed peppermint pieces and gold colored sugar sprinkles

 

Directions:

For dark chocolate filling, place chocolate chips in a medium heat safe bowl. In a heavy saucepan, bring cream to a low boil. Pour cream over chocolate chips and let stand for 5 minutes. Whisk liqueur into cream and chocolate mixture until mixture is blended together and smooth. Cover bowl and refrigerate for 2 hours or up to 1 day. Repeat this process for the white chocolate filling.

Once fillings are chilled, shape into 1 inch balls then place on a parchment paper lined cookie sheet. Place in freezer for 1 hour.

For the dark chocolate coating, place chocolate chips and vegetable oil in a microwave safe bowl.  Heat in the microwave, stirring every 30 seconds until completely melted.

One at a time, dip chilled ball of filling into coating mixture, making sure each one is completely coated. Place each truffle back onto the parchment paper lined cookie sheet and sprinkle with decorative garnish.  Once all truffles are garnished, refrigerate until coating is set or you are ready to serve them.
